Chamomile Tequila Highball


For a single cocktail

1 2/3 oz Jose Cuervo Tradicional Añejo*

5/6 oz freshly squeezed lemon juice

2/3 oz chamomile and saffron syrup

1 sprig of flowers for garnish

Cubed ice


For the chamomile and saffron syrup

13.5 fl oz boiled water

3 chamomile tea bags

1 pinch of saffron strands

400g / 14 oz sugar



Make the chamomile and saffron syrup

Add the boiled water to a heatproof jug. Add the chamomile tea bags and saffron and stir to submerge. Leave to infuse for thirty minutes. Strain and keep the liquid for use. Add the sugar to the liquid and stir well to dissolve. Store in the fridge until needed.


Make the cocktail

Fill a highball glass with cubed ice, add the Jose Cuervo Tradicional Añejo, lemon juice and chamomile and saffron syrup to the glass and gently stir. Add more ice if needed, the glass should be full to the top, and top with soda water. Stir gently to combine and garnish with a sprig of flowers.
