3 habanero peppers, deseeded and sliced
750 mL Jose Cuervo Tradicional®
2 ounces fresh lime juice
1/2 cup ginger beer
2 teaspoons simple syrup
flaky sea salt
Combine habanero strips and tequila, seal in a jar, and let rest 3-5 hours at room temperature. Test and allow to infuse longer if more heat is desired, up to 24 hours. When done, strain the peppers from the tequila and pour back into the original tequila bottle.
If salt is desired, run a lime around the rim of a glass and dip into a pile of flaky sea salt. Add a few cubes of ice to the glass.
Combine the lime juice, ginger beer, simple syrup, and two ounces of the infused tequila in a cocktail shaker or tall glass with ice and stir.
