Piña Old Fashioned

INGREDIENTS

2 oz Jose Cuervo® Tradicional® Añejo Tequila*

.25 oz Pineapple Rind Syrup*

2 dashes Bitters

Garnish: Orange twist or dehydrated orange wheel

PREPARATION – COCKTAIL

Add all of the ingredients to a rocks glass filled with ice. Stir and garnish with an orange twist or dehydrated orange wheel.

PREPARATION – PINEAPPLE RIND SYRUP

Be sure to wash pineapples before cutting and juicing. Save pineapple rinds and leftover pulp when juicing. Add Pineapple scraps to 2 cups of raw cane sugar. Muddle and let sit for 4-6 hours. When ready, add the sugar and pineapple scraps to a pot with 1.5 cup water. Bring to a boil then reduce to a simmer, stirring until sugar is fully dissolved. Strain, using cheesecloth if necessary. Optional, add 8 Black peppercorns to the sugar & scrap mixture. Strain at the end.

  • Yield: varies based on how much pulp & how much flesh is left on the rind. Roughly 1 qt.

SUSTAINABILITY OVERVIEW

Pineapple Rind Syrup makes use of the scraps of a pineapple that otherwise would have been thrown out.

*40% Alc./Vol. (80 Proof).
